The hindbrain must be the the target for slaughter with a gun or humane killer.

1. Goat skull, posterior view. Slaughtered professionally.

2. Heifer skull, dorsal view. Slaughtered professionally.
I have seen cattle skulls with virtually identical marks excavated from Roman sites. Presumably they were slaughtered with a pointed hammer.

3. Turkey skull, oblique dorsal view. Slaughtered (successfully) by an amateur poultryman with an airgun.
